Look Inside Pharrell and David Grutman’s New Stunner, Swan and Bar Bevy

The highly anticipated Swan and Bar Bevy (90 NE 39th Street) is finally open in the Miami Design District, marking the debut of the first partnership between Miami hospitality mogul David Grutman, singer/producer Pharrell Williams, and French chef and winner of Europe’s Top Chef season three, Jean Imbert. 

The restaurant features a menu inspired by flavors from all over the world. Imbert — who knew and cooked for Williams for years prior to opening Swan — tells Eater Miami that he used his memories as inspiration adding twists to classic dishes like burrata topped with fresh figs; a “standing” Caesar salad topped with rosemary bread crumbs; spaghetti tossed with caviar; chocolate soufflé with house-made Nutella; and Williams’ personal favorite dish, the “Corn Corn Corn” made with polenta and topped with popcorn. 

“He [Imbert] just bends your tastebuds and expectations in a way that you walk away going, ‘ok this is worth a conversation,’” says Williams on the menu that he describes as modern chic. “And that is the purpose and the point and the ethos of Swan, to have an environment and food stimulate good conversation.”

The two-floor, 13,500-square-foot, 250-seat restaurant’s interior was designed by Ken Fulk and Kobi Karp Architecture. Swan, which is located on the first floor, features a palette of soft pinks and grays, jewel-like finishes, and artwork by fashion illustrator David Downton. Inside the main dining room is home to a horseshoe shaped bar covered in scalloped tile and backed with pink onyx.

Upstairs guests will find Bevy Bar, boasting a more sultry vibe with dark wood floors and velvet seating and images of women decorate the walls. In true Miami fashion, there’s also a rooftop lounge with twinkling string lights perfect for outdoor cocktail drinking.

Swan and Bar Bevy are now open for dinner daily at 6 p.m. with lunch and brunch service to follow in the upcoming weeks. For more information call 305-704-0994.
